Realization Struck
It struck me last night that when I make something for dinner it doesn't have to have loads left over. It is actually okay not to make something that will last a week.
I don't know why it has taken me so long to come to this particular realization.

I seem to be incapable of making just enough. I must have been a starving child in a former life. We always have leftovers, but they don't usually go to waste.

LOL, Nathan used to go nuts because when we first got married I still cooked like I was at home cooking for a family of 7. I had no idea how to cook for two. I still tend to make too much even with 6 of us.

LOL, that picture is darling.
I have the same problems with cooking. I make too much when all four of us are here. I think it will be a huge adjustment to downsize my cooking when the boys move out. We have a big freezer in the garage so none of it goes to waste!

Making the right amount is really challenging. I couldn't believe how much DH ate when we first got married, it was amazing. Now I just routinely make a lot so that the leftovers hang around. This was obvious recently since I've been sick--the professor just doesn't make enough for leftovers, and then we start from scratch most nights! It's resulted in a lot of pizza and take out. I'm cooking now--and making leftovers!
